White tea is the fastest-growing premium tea category in Europe and North America — and also the category where grade confusion costs importers the most margin. This guide compares the two workhorse grades, Shou Mei (寿眉) and Bai Mu Dan / White Peony (白牡丹), and shows how to select the right one for your program.
Same Tree, Different Plucking Standard
Both grades come from the same Fuding cultivars; the difference is what gets picked. Bai Mu Dan is one bud plus one-to-two young leaves — visible silvery down, plump buds, a fresh floral cup. Shou Mei is leaf-dominant with fewer buds — broader leaves, deeper color, a mellower, fruitier cup at a markedly lower cost. Silver Needle (all buds) sits above both.
Side-by-Side
- Bai Mu Dan Grade 1: more buds, silvery down, apricot-yellow liquor, floral-hay sweetness — the premium retail-shelf choice. Bai Mu Dan bulk specification →
- Bai Mu Dan Grade 2: more leaf, softer cup, better cost for daily-drinking private labels.
- Shou Mei: darkish even leaf, amber liquor, date-and-herb character when aged — the workhorse for aged-tea cakes and value lines.
Fresh or Aged? Verifying Age Claims
Aged white tea (3/5/7 years) commands a premium — and attracts fakes. Genuine aging darkens the leaf naturally to amber-brown (never charcoal-black), deepens the liquor to amber-red and builds jujube and herbal notes. Artificially wet-piled “fake aged” tea smells musty-sour and gives a muddy liquor. Demand declared storage years with warehouse traceability and liquor comparison photos.
Organic and Compliance Notes for EU/US Buyers
Contract parameters for white tea: moisture ≤ 8.5%, total ash ≤ 6.5%, per-lot COA with EU MRL (Reg. EC 396/2005) residue scope. For the organic channel, EU Organic and USDA NOP certified lots from contracted Fuding gardens are available — always verify the certificate number against the certifier database, not just the PDF.
